Definition of Term

Cold-smoked fish
(English) Fish cured by smoking at air temperature not higher than 30 deg Celsius to avoid cooking the flesh or coagulating the proteins. Tropical species may be smoked at slightly higher temperatures. (See also: cold smoked, Smoked fish, smoke drying)
